Wheel/size/offset and tire/size/profile...can be confusing.

no, you said 20mm spacer making 26.5 offset. a 10mm spacer would make your 8.5 wide wheel 36.5 in front which would be about right visually with no poke, I think it'd be flush. the 8" front wheel in back is going to work just fine squared. and that 36.5 offset in front with the 8.5 rear wheel will make a squared setup with that wheel work. however, that said, unless you can find a used set of oem wheels you are going to pay through the nose they are way overpriced new.
Only thing I would mention about using a 10mm spacer is that you will need to use longer studs. Unfortunately a 10mm spacer can't just go over your hub and work, your oem studs with make contact with the back of the wheels. So you either shave them down, which I personally didn't want to do, or you go through the hassle of removing them and adding longer studs.

I also did additional testing with a 15mm spacer all around, I will get pictures for you later today. While it sits better than the 20mm ones, I did notice when I got up to speed 75km+ my steering wheel would have a slight wobble to it. I am sure I installed everything right, I even double checked the next day and this happened. I have decided that I will eventually sell my OEM wheels entirely and just buy a new set for the winter and one for summer.

I'm going to go away from spacers and try to get wheels with the desired offset because of this. Seen a lot of rumblings about wobble and sway with certain setups.

No problem, here are the photos of how the car sits with the 15mm spacers. I took them quick as I was in a rush, but you can see it basically is flush with the fenders, maybe sticking past a tiny bit. I think with 255 tires it would look a little more pokey

Never liked spacers and I don't think you can use hubcentric rings with them.
Just ordered my Stance Wheels today custom cut + bored to specs no spacers or rings needed 20+9 32 20+10.5 45
And yes I read read this entire thread. All 48 pages of it

Curious is to why you went with 275 instead of 285? That’s closer rolling diameter to 245/35 and the rears wear out a lot more quicker than fronts.
I actually switched to 285. Still waiting on my rims to arrive I'm lowered so I'm a little nervous but I think it'll work.
And you're correct, rolling diameter is equal with a 285

Thinking of doing:

245/35/19 front
275/30/19 rear

Any other suggestions? Spring is upon us. I need new tires.

You can safely run instead:

255/35/19
295/30/19

And if you're AWD, they are a perfect match diameter-wise front/rear.

I would be running those sizes, but they're not available for all-seasons in 19-inch.

They would look better than this below, check their sizes in my sig. They are a perfect match front/rear too, but the next smaller matching-size for AWD:

The main takeaway is whether you like a stretched-tire look versus a more squared look.

To clarify, when I say stretched, I mean that the tread is too narrow for the width of the rim, and as a result, the sidewalls must bend inwards from the rim to meet the narrower tread.

Squared is when the sidewall goes straight-up from the rim to meet the tread.

I prefer a squared look, but unfortunately I think my current sizes are too stretched:

Originally I had 255/35 and 305/30 on the rims, but that was before I discovered that one MUST match the front/rear diameters. I thought they looked great - nice and squared:

However, to use a 305/30 for AWD, one needs a 265/35 which is too wide to fit on the front.
