With the car stock, slap it in Sport mode and turn of Stability/Traction Control. Thats about the limit of getting rid of any throttle control nannies you can do. The car will still step in, but only at 9/10 of the limit of driving when your getting a little 'too' sideways.
Unless you go full ECU flash, you won't remove the throttle control from the ECU at all, and honestly, unless your going full on track mode why would you? The car does a pretty dam good job for launching, but it will hold back a little. The best explanation most of us have been able to figure out is that it saves the tranny and differentials (AWD) from multiple hard launch control launches.
Once it's broken in, put it in Sport mode and disable traction/stability control. Stand on the brakes, watch for 'Launch Control Active' to pop up on the dash. Floor the gas and then let off the brake. You'll never utter the words 'lag' again for the Stinger and you'll have a perma-grin that I still have almost a year into owning mine.
