Seriously considering a 2018 GT2 AWD

I am also currently thinking of getting a GT1 or GT2, but can't decide which model yet. I was wondering what time of the year is the best time to purchase. I was thinking that I will wait until late 2019 or even early 2020 to get a good price on a 2019 model year, is this a good idea is or there a better time to buy.

Imo, unless you know for certain just how long you are going to live, right now is the best time to buy.

No. It's just a super fun car and life is fleetingly fast. If you buy now, you'll have just that much more time to enjoy it.

I am sure it is a fun car, but I don't mind waiting a bit for prices on the 2019's to come down. I don't even want to test drive it until right before I am ready to buy it, because it will make me want to get one that day.

According to Kiplinger's and other economist, auto demand is still high, though slightly less than 2018. July and August will be the best time to buy a new vehicle this year.

I believe that will hold true for the stinger too. Should see the best combo of lot depreciation plus manufacturer incentives.
