Lowering springs misaligned?

What are these things in between the coils?

To prevent puck marks when the coils collapse and hit each other. This is especially a problem for dual-rate springs, like these Eibach rears. The top (softer) section is purposely designed to collapse on initial compression, in order for the lower (stiffer) section of the spring to take effect.

Pic is of my Riaction "OEM" springs.

Yes. Eibach springs on my '19 2.0T. The "bend" in the coil is mostly due to the dual rate spring. The top section is softer and creates a discontinuity with the lower stiffer section, as they react differently to compressive load. It's by design and no real cause for concern. Once the top section is fully collapsed, that section becomes a rigid body and can bend no more. The slight kink does not affect how the lower section works.
 
I tried to recreate that angle you got on the last pic and managed to get something like this they look nearly identical to me

Thinking it should be such a small issue like what you described with the seating in the hat but I think the side step I’m feeling in the rear end is just normal with the car. I read a lot of threads where it was mentioned and it was a normal thing seems the car just doesn’t behave to well over bumpy roads I suppose the lowering of the car doesn’t help, in fact might even make it worst.
you have the fix for the rear end craziness, the aftermarket sway bar. That's what finally killed all uneasiness on mine. Now, perhaps they didn't tighten the links under preload after they installed the springs. or something else wasn't fastened right after install if they removed the front struts to get the springs out. (I didn't have to remove the strut from the hub to get the spring out when I did mine.) The rears don't require removal of the shocks, just undoing the lower arm bolts and the swaybar endlink. Try to see if the behavior is worse when you hit a bump with one side as opposed to the other, maybe it can be narrowed down that way.

I have the sways but they set it at a firm setting and the roads here aren’t very good ima go for a drive now to fill gas and test your theory

I have my front bar on soft, rear on firm. was the front bar on firm before the spring install? I have not driven mine with the front on firm, although my solid-core ARK front bar is 2mm thicker than the hollow-core eibach at 25mm, so mine's already a good bit firmer than the eibach on soft.

I got back from the shop they also reported all is good. More than likely the alignment being off at the moment is causing such issues

Getting a new set of tires and and alignment in a week or two I’ll let you guys know if it’s still a rodeo on the rough roads
 
Just ended up swapping into coil-overs and it’s been just as good as my gt86 was stock now haha so hey I suppose it’s good considering this car is much larger and less nimble naturally. Also got some Cooper Zion rs3-g1 tires thrown on they have been very good aswell they aren’t so quick to burn out on a corner turn compared to my previous set of Falken Akenzi
