Fuel economy getting better and better.

On a round trip from Southington, Ct to Laguardia I get between 27.5 to 28.5. That's normal driving, not hypermiling or anything like that, in smart mode. I dont typically use cruise control.
 
is there any 'rule of thumb' as to how much difference wind makes? For example, if you get 25 mph in calm conditions, what would you get with a 20 mph tailwind or headwind?
 
This past few days I have tried to see how much I ca push the the fuel economy, tried to stay around 65mph and been getting this kind of fuel economy, I wonder if this is just an anomaly or is supposed to be like this cuz Im not murdering the gas pedal.
Mine is a 2019 GT2 RWD ( by the way the best stinger money can buy) :D
Mines faster and it's a 2018 awd
