I have drinking water bottles in the hatch. (I'm remembering the Mustang driver in that video, who did an out of control donut and came back and knocked over a gas pump and lit his car on fire: he ran to a grocery store next door and came back with a water bottle and tried to toss its contents on the blaze, then ran away.)

Regular one in a bag in the hatch. Just for daily emergency, not track/drag use.

I have one stored in the trunk. It is one that is made to be carried in a car or boat. Held in place with a bungee cord.

Bought the bracket and extinguisher from Amazon. the bracket mounts between the seat rails on the front passenger seat, and I can reach it from the Driver's seat. seems very secure. It was easy to install and the whole kit was not that expensive.

The seat has almost full range of motion. If you move it all the way to the front it eventually starts pushing on it, but it has to be really far forward to hit it. You can back it up all the way, which makes the extinguisher mostly visible, or keep the seat kind of in the middle which almost completely blocks it from view.
It's a good setup.
