Talking about Spaghetti and pasta.

How do you like your Carbonara? with cream or without?

Something I learned from this Milanese guy. Apparently, Carbonara made with cream, onion, and egg yolk is a "French" version. The Italian version uses the whole egg, whipped well, lots of hard cheese, then mixed with the pasta without heat, so the egg isn't cooked and still 'creamy' when served. However, the French one is so common, they serve the French version in Italy now.

.............real Carbonara doesnt have cream , only egg yolks , pork cheek , pepper , garlic and Parmesan .............simple is better

Oh yes, I didn't drive last Friday. Very important not to drink and drive, even attempting to drive. lol.

Conveniently the dinner was just across the street from my office, which is literally next to where I live.
