Why do them on the car?
Maybe the logic was that they wouldn't have to mess with bleeding, resetting calipers, etc...? Might be faster, but seems like the time you'd save in leaving them on the car would be offset by the time you have to spend taping off the whole car to keep it from getting overspray while you painted...
 
Because they can I guess.

Painting calipers on the car is generally done when there are other compromises at play. It just doesn't seem that's the case for these guys!

Painting calipers on the car leads to an incomplete job. There are surfaces on the caliper that you can't get to when they're mounted, it's hard to clean the calipers properly to get a good bond with the paint/etc. It's honestly easier to do a proper job of it by removing them and spraying them in a booth (or just hanging somewhere away from other stuff) if you have the right gear (and they don't seem to have any shortage of gear) than to mask the car up as they've done (and they did a good job of masking off, I am not questioning that!).

I think you summed it up with "easier to do a PROPER job of it by removing them". Personally I would have to have them removed for painting.
 
I just watched to the end - I do hope the rattlegun was only used to snug the wheelnuts to the wheels, and they finished off with a torque wrench!
