let me start by saying I have a 2018 GT1 with 120k miles. So I’m really trying to decide if the cost for repair is worth it.

It started a few month ago sitting in traffic and then I noticed again sitting in a drive through. Now it’s happening more and more. The car will overheat (with crazy warning alert). I assume the thermostat is getting stuck/unstuck because it seems the fan finally kicks on and it cools down.

Also, the fan never really used to run when in shut the car off but now it seems to run every time.

Second issue: or maybe they’re related? I have no heat at idle/low speeds. But it comes on over ~30mph.

Could they be related or am I looking at two major repair bills?

Most likely related. Sounds like you're low on coolant. Have you checked the overflow to see if it's between the two lines? Make sure you check it when your car is completely cold (like first thing in the morning if you've been driving).

Agree with bfglitch. Sounds like a classic case of low coolant.
I had this same issue on several cars that had a lot of miles on them, and it was the radiator that had gone bad in each instance.
