101 octane should be plenty for Map 5, considering that many people run that on E30 which is more like 98 octane.
Still a good idea to check your logs as you work your way up through Maps 3-4-5, as I don't think you'll have the cooling effects (or cost savings!) of an ethanol mix, but you'll have more inherent knock resistance and less risk of maxing out your HPFP (ethanol being lower energy and therefore requiring a richer mix).
Might as well try 98 and maybe 96 to see how your logs look, because they may run fine, and extra octane beyond what you need is a waste.
Be careful with anything labeled "Racing Fuel". Even though tetraethyl lead (TEL) is banned for on-road vehicles, it is still permitted for aviation and racing applications. Pump that stuff in your car, and say goodbye to your catalytic converter and O2 sensors.

FWIW, I've seen that pic up top posted in other forums and FB groups. Does not look all that authentic to me. The "6" in "96" looks like a sticker pasted over. The "98" looks like an "86" sticker pasted upside down. Even the "94" looks like a big sticker over the button. If I see this pulling up to the pump, I'd pull away and not bother going back to that station, regardless what wording on the labels promises.
