I agree with you and don't like the stereotype that black interior equates to a performance car, however this is an ongoing trend for a few reasons.
Most performance cars throughout history typically focused on "performance" enhancing items instead of esthetics, so standard black and Teutonic interiors became the norm for these types of vehicles. Luxury vehicles went the opposite route and focused funds improving interior spaces with expensive looking & light colored leathers, etc. The fact is that almost every Ferrari/Lamborghini made has a dark interior and almost every Bentley/Rolls has a light interior. This wont be changing anytime soon, but at least the trend is moving toward a combination of light leathers with dark trim for luxury sport cars like the Audi S7.

I give Kia credit for mimicking the high-end luxury/sport look almost exactly, but unfortunately they made it exclusive to the GT2 with Micro Blue exterior. I absolutely love the blue, but had to upgrade to the GT2 just to get the "luxury" Gray Nappa leather interior. Even though the headliner, etc. is dark the light leather throughout makes a night and day difference and still feels very open in comparison to the black on black.
FYI- The dash, console and any materials in direct sunlight must be dark to avoid reflections. That is simply a safety feature built into almost all vehicles. The trick is to find a perfect mix of light leathers with dark accent trims, and think Kia nailed it with the Blue GT2! Unfortunately they dont offer that combo anywhere else so only a select few are lucky enough to enjoy it.
