Currently have 275 30 20 on my my 2020 GT2 Stinger. I don't like how the lip of my 10.5 wide rims stick out especially living in NYC. Will 285 fit with stock suspension and not rub?

Depends on the offset of your wheel. I think you should be good but best to check with the tire calculator site. I know with enough offset you can fit some chonkers in the rear. Like 305 or something
 
with a 45 offset you can fit 285, that's the most common not sure about something else

I think +40 should work. I am about to order my wheels. And they advised to get 285/30 r20 for a 20x10 +45 wheel.

I've ran 285 on 19x10 et35 and they rubbed the fenders on big dogs and fully loaded car on the highway ( full compression). Now I'm running 285s on 20x10 et40 and no issues this far but haven't hit the bump stops on the rear with these.

You will be fine with 38 mm offset or more.
