I'm not sure if that's 7th or 8th gear. Motor Trend's 1500rpm per 60mph would mean 4500 at 180 mph (271 kph is 168 mph), and power doesn't really start to drop off until the 6-7k range. But as you mentioned, the extra couple dozen horsepower is only going to buy you a couple mph.
By "pulling strong" I meant still increasing a kph every second or so. I don't know the Stinger's frontal area or drag coefficient, but playing with an online calculator with numbers that showed ~170 mph from 370 hp, it suggested a top speed of 185-186 mph (300kph) with ~485-490 hp.
If the stock car is good for 175, maybe an E30, map 4-5 tune would get you closer to 190. Maybe.
