Sure, lots of people have. Just search these forums, check out the one on wheels tires and brakes.
To keep the overall same diameter (to avoid messing with the speedo accuracy), it will mean a pretty short sidewall and rougher ride, but if that is your style. Just check the forum I mentioned and make sure you get rims with the proper offset.
