From a complete stop accelerating hard around corner my Stinger loses power / boost for a second or two and then picks up boost again, only does it around corners from a stop with hard acceleration any ideas?

Traction/stability control maybe? You're taking off around a corner, the computer is probably trying to sort things out.

100% this is your traction control kicking in so you don't kill yourself. Is this your first fast car? The Stinger has enough torque and hp to easily break traction.

You have two options, either turn off traction control/ stabilty control by holding down the TCS button for 5secs, or better manage throttle input when pulling away so that TCS doesn't engage.

Which mode are you in ? The car seems to do that to me in the snow when in Comfort mode. As P22Tyler says, it's most likely the computer trying to sort things out to handle traction issues. You gotta remind yourself that the thing weighs two tons too :)

Is the car bonestock too ?

He will die/kill someone.
Although I get the message you're trying to send, don't forget the Stinger is quite a safe vehicle.

The second option is a much greater possibility considering he'd start from a stop.

(That's humor. Sorry, I'm out!)

I have a few mods on the car but nothing to really add a whole lot of horsepower games, there's the typhoon cold air intake, colossal Tech big mouth Docs, agency intercooler, go-fast bits blow off valves and borla Cat-Back exhaust, pretty sure I was in sport mode with traction control turned off because I was wanting to hear the tires spin don't get to hear that much with an all-wheel drive

I would bet like most modern cars when you turn off the stability control it doesn't actually turn completely off. I think I have experienced exactly what you're talking about, when I pull out of my driveway if one of my back tires catches the part where the driveway starts to slope up to meet the curb the car will kind of pause, I assume it's because one of the wheels is up higher than the other 3 and the car is wondering what the hell is going on.

It's the torque limiter likely. Even with the traction control and stability off there is still some preservation nanny that will limit power from a dig. If you want to have some fun you have to be moving a little bit and kick the tail out.

Yes, "sorting itself out" (and trying to save its ass from you ;)) is the explanation. I've avoided disturbing cuts to power by pointing the car where I want it to go, then getting on the go pedal. When turning I stay smooth and not in too much hurry to power through the curve. Works really well. Don't drive the Stinger like a dune buggy.
