Yes, they can surely get more power out of the Stinger's twin turbo V6. I bet they're just waiting to see how well it sells as is to determine whether or not they'll put in the extra effort for a more expensive version...This article on an Australian motoring blog says that Biermann thinks he can get more out of the Stinger GT. Now am I going to have to wait longer to get one?

I think it's mostly about perception. In most people's eyes it's good to be green. I imagine the way Kia sees it is - why use the big bad V8 when the little green V6 does just as good and saves a little fuel.Questionable as to whether or not it would fit. Though I will say, with the G80 at least, the TT3.3 v6 fuel economy is hardly any better than the v8, so you gotta ask yourself "why even bother with the v6?"
