If a spark plug was the problem wouldn’t it still shudder on map 0? And again the log not working ?

If the problem is spark plug gap, the stuttering will occur at a certain psi level. If map 0 doesn't get that high then you won't experience the shuttering. Once you get to the level of psi that 'blows out' the spark you will experience it. I don't know if a broken spark plug and/or bad coil acts the same.
