3.3TT Can't brake drag in a stinger (for brake pad bedding)?

I'm trying to bed in my EBC Bluestuff pads using their "Real-world street bedding routine" which says "apply the brake to 30% or so pressure whilst continuing to press the accelerator to main vehicle speed for as long as safe to do so".

But when I brake with the gas pedal pressed, the engine cuts the throttle no matter how much I feather it, until I let off the brakes. I've tried it in sport mode too.

Assuming this is a built-in software nanny or something, is there a way to bypass it?
 
My guess would be that the same brake-snip trick used to let you build boost at launch would also prevent the ECU from seeing that you're braking while cruising:

 
You can also bed them by getting up to high speed and doing some repeated fast braking to 20 mph and then accelerating back up to 60-70 and doing it a few times. Just make sure to do it at a time when there’s very few people on the highway with you and keep driving for a while afterwards without stopping to cool them off.
