I just bought a 2020 stinger GT. I'm looking at getting new blow off valves. Is there any that work better then others? Do I have to get a specific kind?

You don’t have to get a specific kind. Most people who have bought any before have their favorite brand. I recommend Turbosmart. I’ve worked for the company before and know the quality put into the design and manufacture of their products. If I bought a kit, it would be them.

With stock turbos and stock boost levels, what's the advantage/need for aftermarket blow-off valves?
Is it just to get the swoosh sound? I understand since the Stinger runs a MAP system instead of a MAF system, the BOV can be dumped into the atmosphere, can the stock BOV be modified to dump to atmosphere without issues?

Aftermarket BOVs are meant to offer better consistency than stock recirculating valves. A stock car would more than likely over the long haul not ever have issues with its valves. However, a modified car benefits greatly from upgraded valves. A well built valve holds pressure without leakage while on boost and correct spring pressure allows the valve to open and close properly without “chuffing” or opening early.

If you're mostly looking for sound, just put intakes on the car. The recirc valves are surprisingly loud without the factory airboxes keeping them quiet.

The only time it would function is when you let off the throttle. No, you won’t hear it between gears as in a manual car. It does work, but when only when letting off the throttle.

For wooshy sound, a BOV should be at the top of the list.

The Stinger uses a unique BOV mount, and uses two of them, so you have to either buy valves designed for our car, or get an adapter that bolts onto the manifold and gives you a more common BOV mount.
Just search around and you'll see several options. Note that there's a persistent issue with counterfiet Tial valves. You also have to make sure the aftermarket valve is set up correctly for the car - it's not necessarily a bolt-on-and-whoosh job.

If I got ones that were designed to fit the stinger such as the HKS or agency power ones it should be more or less bolt on correct?
 
They should be, but it'd still be wise to pay attention and make sure it's working correctly.
