Bigger tires on stock wheels on '22 AWD Scorpion

I am currently running stock tires, 225/40/19 front and 255/35/19 rear, on my AWD. Would going up to 235/40/19 front and 265/40/19 fit on stock wheels? If it does fit would it make that much of a difference?
 
3mm OD difference, compared with an OEM difference of 2mm, so, negligible. Your speedometer will be off a little bit. I don't know how much, but you will have to remember that your actual speed will be higher than the speedometer indication probably within 1 to 2 MPH under actual.

I've always found it a minor annoyance that the brand new OEM tires on 19" wheels are 2mm smaller in the rear starting out. And staggered means that the rears wear c. twice as fast as the front tires do, thus creating a discrepancy that worsens the more worn the rear tires are. And your potential setup loses an additional 1mm of rear tire size starting out.

Do you mean 235/40R19 front and 265/35R19 rear?

Otherwise, both being 40-series would mean the rear tires are much larger than front. That'd mess up your AWD.

Ah yes that was a typo, I meant 265/35R19

Yes 235/40 & 265/35 work great. Could run 235/40 and 275/35. I don’t because being lowered and 20mm spacers on rear, its very close to rubbing fender as it is.
 
I've been on 235/40 and 265/35 for two plus years now and love it. no issues whatsoever.
