Would running a 0w20 damage the engine?
I've got Mobil 1 0w20 and was wondering if it would be okay to use instead of 5w30? I've noticed similarly specced cars these day recomend 0w20 and I don't push the car hard at all. Easy 1000rpm cruising all day long.

Consult the good book.

if it is in the recommended ranges. Great. If not, why mess with your warranty?

I think 0w20 was acceptable in the 2018 manual, after that, they removed it, IIRC. So it can't be horribly bad, but probably a little too thin for hot climates - for hot weather, you usually want to go heavier, not lighter.

If you want to use up your old oil, maybe buy some 5w30 and put in 1-2 quarts of 0w20 per oil change? Running 3.5w27 or something should be fine.

2018 OM (in Aus) states "ACEA A5 or above / 5W-30" which covers temp range -30C - +50C.

Believe it or not, '0w-20 C5" is the OEM suggested oil viscosity for the Supra. Could be wrong (have not read all of the manual) but I believe that is a "European" spec?? (the engine is BMW). I too thought it was a bit thin for a turbo car especially in the Summer.

In my Stinger, had all oil changes done at dealer due to having no-cost oil changes for 3yrs. None of the shop tickets called out the oil viscosity but part number listed as: NPNENGOIL. If something different were ever put in there, they did it so never worried about warranty in case of incorrect viscosity.
