Map 1 logs After adding e85 and resetting the ecu

I would try map 2. it's not bad. One thing, try to get a better log. Maybe a full throttle pull starting in 2nd gear and maybe 30 mph, all the way to 90 mph. The timing deviation being a .8 is pretty good. If you can keep it at 1.5 or lower, on ignition 2-6, then your Octane is sufficient. If you have access to 93 octane, that's all you should need for map 2. If you are running 4 gallons of e85 with 93 octane, you should be able to run map 3 also. If 91 octane, then Map 2 assuming you add the e85.
