Default to map0 without app?

Without the app connected /Bluetooth iOS ….does the jb4 default to map0 or does it hold the last settings?

When you buy the JB4, default map is 1. When you switch to other maps, it remembers the last map.

Yes, and make sure you disable the map selection via the wiper stalk, just in case the "other" driver starts playing with the controls.
